Chef Tyler Stone prepared this amazing salad at a local strawberry festival. The crowd loved the savory chunks of aged parmesan cheese combined with the subtle sweetness of the strawberries and basil.
1 heirloom tomato, cut into pieces
6 large strawberries, sliced
8 ounces pre-washed arugula
8 large basil leaves, chopped
1 pinch of sea salt and freshly ground pepper
1 tablespoon extra virgin olive oil
1 tablespoon aged balsamic vinegar
1 wedge of aged parmesan cheese
Combine all of the ingredients except for the oil, vinegar, and cheese in a large mixing bowl. Add the olive oil and toss well to coat. Then add the vinegar and toss once more. Serve the salad in bowls with freshly grated parmesan over the top and serve immediately.
