Gin and lime are the traditional ingredients and produce a strong drink that gin lovers will adore. For a milder cocktail use vodka and lemon juice. Strawberry Rosemary Syrup
- 2 cups frozen California strawberries
- ¼ cup sugar
- ½ cup water
- 1 Tbsp chopped rosemary leaves plus more rosemary sprigs for garnish
Per drink:
- 1½ oz gin or vodka
- 1 oz strawberry rosemary syrup
- ¼ oz strained lime or lemon juice
- handful of ice
Instructions
To make the strawberry rosemary syrup:
- In a medium saucepan, bring the strawberries, sugar, water, and rosemary leaves to simmer on medium-high heat. Reduce heat to low and simmer 15-20 minutes until the syrup is thick and strawberries are very soft.
- In a large, fine mesh sieve set over a bowl, strain the syrup, but do not press on the solids. Chill syrup until at least room temperature. Use for cocktails or save in the fridge for up to a week.
To make a single drink:
- Shake gin, syrup, lime juice, and a handful of ice in a cocktail shaker. Strain into small coupe glasses (or other glasses of your choice). Garnish with a sprig of rosemary.
