Ingredients
FOR DONUTS:
- ¾ cup finely diced strawberries
- ½ cup mashed banana 1 medium ripe banana
- ½ cup almond milk
- ½ cup almond butter
- 1 tsp apple cider vinegar
- 1 tbsp maple syrup
- ½ cup cassava flour
- ½ tsp baking powder
- ⅛ tsp salt
FOR ICING:
- ⅓ cup strawberries
- 1 cup powdered sugar
Instructions
- Preheat the oven to 350 degrees Fahrenheit and spray a donut pan with oil. In a large bowl, whisk together the wet ingredients including the strawberries, mashed banana, almond milk, almond butter, apple cider vinegar and maple syrup. Add in the cassava flour, salt and baking powder, and stir to combine completely. Pour into the donut mold until full and bake for 20-25 minutes until the donuts are golden brown and firm to the touch. While cooling, add the berries to a blender, then stir in the powdered sugar.
- Once the donuts have fully cooled, dip them
- into the icing. Feel free to do an extra layer once the first layer has somewhat dried.
Notes
Cassava flour can be swapped for oat flour, but the texture may be slightly different. If
not gluten-free, white or whole wheat flour an also be used.
